                                150GMS FRESH BREAD CRUMBS
                                 30GMS PARSLEY CHOPPED
                                 SALT TO TASTE
                                 BLACK PEPPER TO TASTE
                                 60GMS MELTED BUTTER
    
MANGO SALSA: 100GMS FRESH MANGO DICED
                               30GMS CORIANDER DICED                  
                                50GMS RED CAPSICUM DICED
                               50GMS RED ONION DICED
                               SALT TO TASTE
                               BLACK PEPPER TO TASTE
                               30GMS SUGAR
                               10GMS RED CHILLI DICED
                               20MLS WHITE VINEGAR
STEP 1: REMOVE ANY BONE OR FINS FROM FISH FILLETS AND SEASON. CRUSH NUTS, COMBINE WITH BREADCRUMBS, PARSLEY, BUTTER, SALT AND PEPPER.
SPRINKLE CRUMB MIXTURE OVER FISH FILLETS, BAKE AT 175C FOR 20 MINS OR UNTIL TENDER.

STEP 2: FOR THE SALSA, COMBINE ALL INGREDIENTS AND SEASON TO TASTE AND SPOON OVER BARRAMUNDI WHEN BAKED.

THIS DISH IS VERY NICE WITH A BROWN BROTHERS CHENIN BLANC.
